While visiting Chiang Mai, there are many spots you could consider including in your sightseeing, and the Chiang Mai Zoo and Aquarium should definitely be on the menu. Why? Pandas (including a cub), polar bears, giant manta rays and more, of course!

The Chiang Mai Zoo achieved international acclaim in 2009 thanks to the birth of a baby panda, Lin Ping, a rare event with pandas in captivity: pandas have long been considered an endangered species-the Ailuropoda melanoleuca, or the giant panda, was classified as such as early as 1984 by International Union for Conservation of Nature and Natural Resources (IUCN); today their status is "conservation reliant." Among other factors that contribute to this, including but not limited to poaching and destroying of their habitats, their birthrate is extremely low even in the wild and more so in captivity. It is no surprise then that, up until 2009, only four countries have successfully bred panda cubs that survive past infancy-Canada, the United States, Japan and China. Thailand's own Chiang Mai Zoo joined that lofty rank after an artificial insemination of Lin Hui, the female half of the panda couple loaned to Thailand by China, successfully impregnated her. The birth of the baby, which came to be named Lin Ping, was carefully overseen by veterinarians and zoologists. An event that overtook media coverage for months to come, it quickly became one of the busiest attractions offered in the zoo: for a long time there was even a channel that let viewers at home watch the cub play, nap, and eat round the clock. China has been so impressed with this success that they have extended the loan of the pandas for five additional years. The Chiang Mai Zoo is also preparing for the care and exhibition of polar bears, which will commence in early 2012.

If that's not enough yet, the aquarium also offers scuba diving and, outside the building, water balls: huge thermoplastic domes you enter which are then floated in the lake that makes up the habitat for the aquarium's exhibits. They are perfect for adults and children alike, and will make your experience truly unique and unforgettable.

Admission to the aquarium incurs an additional price on top of the zoo ticket, as does getting in to see the pandas; they are in the range of no more than altogether.

Introduction to Thai Food - Somtam

Being married to a Thai for the last few years has meant learning a fair amount about Thai food. This isn't such a great accomplishment because it's usually the main topic of our conversations.

My wife once told me that a Thai would be most happy if she could eat seven times a day and I think she is pretty close to that mark. Any time she's not actually eating she can be counted on to be thinking of what or where to eat next.

There's obviously some kind of health secret here. If she's carrying two pounds extra, I have no idea where she's hiding it. If I ate like she did, it would take a crane to get me out of bed in the mornings. The answer must be that what she's eating must be healthy as well as delicious. Her number one favorite meal, snack, between meal pick-me-up, comfort food and health potion is ... somtam.

I confess that I had been thinking of somtam as a low class street vender food until I read a newspaper review of a local restaurant in Chiang Mai (Huen Phen) that quoted world class chef and author, Anthony Bourdain as saying that "their papaya salad is in fact the best salad he has ever eaten." Interesting.

Since then I've eaten it there, ordered it in other restaurants and stood beside street vendors in back alleys as they made some for me. It's always very good and I'm reminded of the great line that David Mamet wrote in Wag the Dog,"There are two things I know to be true. There's no difference between good flan and bad flan, and there is no war in Albania." My wife tells me that all somtam is good but there are some she likes more than others.

Regardless of where you get your somtam in Thailand, what I like is that it is always prepared fresh and usually in the front section of the restaurant (or behind the small glass booth perched on the street cart.)

The essentials are basic: a sharp knife, a spoon and a morter and pestle. The preparation is a blur of culinary poetry.

Throw a handful of chilies into the morter and give a good pound or two with the pestle to release the heat. In quick succession add some coarsely chopped tomato, a dash of sugar, a good splash of fish sauce (available now in most oriental markets,) a small spoon of lemon juice, a clove or two of garlic and (usually) some MSG.

The sauce is finished with the addition of a few tiny, whole crabs (poo) and some salted, fermented fish (balak.)

Pound and stir to bruise and mix the sauce then quickly julienne a firm green papaya and add the spaghetti sized pieces to the brew.

Pound and stir one last time to wilt the green fruit in the sauce. Spoon the salad to a plate or bowl and it will invariably look naturally elegant.

Now for the vocabulary to make sure it's done to your taste. Order Somtam Lao if you want the pungent, sour taste of the balak (fermented fish.) Somtam Thai omits the balak and adds peanuts, which I prefer.

"Mai Sai Poo" means hold the crab. "Mai Pom Chulot" is "no MSG." The somtam beginner should say, " mai phet" meaning "not spicy." I like to order "phet mai mak" or "not too spicy." Only a serious masochist should say "phet gadai" and should not then whine about the fiery pain that the true somtam addict craves.

Hot or not, somtam blends soft with crisp and has an intense but surprisingly balanced flavor that is sweet, salty, sour and bitter in every bite.

One of the most popular places for shopping in the city is the famous Night Bazaar, which attracts people from Thailand and abroad. It is a big market full of all kind of interesting products. The mall has very interesting and nice interiors and it is fully air conditioned which is a great thing in a hot country like Thailand. There are also many great restaurants here, with both Thai and international cuisine. There is also an excellent food plaza where the food is delicious, but quite inexpensive.

Another attraction of the mall is very modern and comfortable movie theater where you can enjoy watching both Thai and foreign movies. Some of the movies are also shown in 3D.

The Kad Suan Kaew Shopping Mall is another very popular and modern shopping mall in Chiang Mai. This one is located on 21 Huay Kaew Road. It is also fully air conditioned and it is very popular with young people, but not only. It has very nice Thai decor and as previously described Central Airport Plaza, it is full of all kinds of shops and restaurants. Very good Lotus Pang Suan Kaew Hotel is also located there.

The Promenada Chiang Mai Resort Mall has not opened yet at the moment of writing. It will open in 2012, but it is already becoming one of the most talked about malls in the city and also in Thailand. It will be the first resort mall in Thailand and it will most likely become quickly one of the most popular.

It is also a country rich in wilderness areas of mountains, forests and waterfalls which makes trekking big business in the north of the country. The best season for trekking is between November and February when the weather is cool and the air is clear. Many operators in Chiang Mai, Chiang Rai, Mae Hong Son and Pai offer trekking tours. Often these will be run from guest houses and it's worth asking around to find one that suits you. A trek usually lasts between three and five days and you will need good boots and a proper pack since the walking can be quite hard especially in the heat.

The guide will usually take you through ethnic villages of Lisu, Karen, Meo, Akha and Paduang. All these tribes are different in dress, language and culture and most migrated to the mountainous areas of Thailand, Laos and Vietnam within the last century from China. Also included in a trek will be some rafting and maybe some elephant riding.

If the gentle rafting on a trek is not adventurous enough for you, many operators offer the white water variety. Pai is the best place to go for this and the tours are run from mid June to January when the rainy season raises the height of the water levels.

When it comes to two wheeled travel Thailand offers some of the best touring and off road motorcycling in the world. The roads are excellent and pass through mountain scenery of breathtaking beauty. Infrastructure is good with plenty of guest houses and places to eat en route. You can either go on a tour or hire bikes on your own, Chiang Mai having by far the greatest variety on offer. It is important to be an experienced driver and this is doubly true for trail riding. Many operators run tours and to get the best from off-roading, or simply finding obscure routes, it is often better to go with a guide who knows the area.

For those who spurn engines then mountain biking is now really popular and there are many operators who run trips. Whether on the lakes and rivers of the north or the Andaman Sea in the south Kayaking is available in most tourist friendly places where there is water. Tours are even run down the Mekong River. In the south Krabi and Phang Nga provinces offer spectacular scenery with luminous seas dotted with soaring limestone outcrops.

For those who want to get airborne there are a number of ways you can do it. Ballooning is offered both in Chiang Mai and Pattaya between October and March. The views in the North are better than on the coast. Whatever itinerary you choose, you will likely pass through Bangkok more than once-the best ruins are north and northeast of the capital, the best trekking is northwest and the islands are all south of Bangkok to the east and west. Nearby beaches can be reached within three to four hours from Bangkok by bus; the large island beaches such as Koh Samui and Phuket are an hour away by plane.

Northern Thailand - Plenty to See

When thinking of Thailand we often think of Bangkok- shopping, clubbing and maybe some more shopping. Or maybe Phuket and its lovely beaches and many beachside resorts. Yet as anymore who's spent some time in Thailand knows, there's much more to the country. 

The northeast of Thailand is a seat of ancient culture and tradition, yet even after so many years of tourism - the area is relatively unknown. 

Chiang Mai

After a two hour flight aboard Thai Airways to Bangkok we disembarked for flight to Nongkhai, a border town between Thailand and Laos on the banks of the Mekong river. A 'friendship' bridge links the two nations and the province is a gateway to Laos' capital, the beautiful and placid Vientinane. 

Northern Thailand - Plenty to See

Inhabitation in Nongkhai dats back over 200 years, with small towns dotting the riverbank. Many ancient relics have been found in temples on the river on the Tha Bo - Si Chiang Mai route. 

Nongkhai is 615 kilometres from the noise and gorgeous chos of Bangkok and covers a large area of 7,332 square kilometres, with the largest length of the Mekong contained within its large borders - 320 kilometres. 

We soon progressed through to Laos, over the friendship bridge, and thence headed on to Vientiane. 

The modern-day capital of Vientiane, which replaced ancient capital Luang Prabang - now one of Laos' most popular tourist destinations - many years ago is a restful alternative to the frenetic pace of most Southeast Asian capitals. Far smaller than other capitals (Laos' entire population is only 5 million people), Vientiane's wide, open streets and blend of French colonial and traditional Asian architecture give the city a quite, quaint charm. Attractions for visitors include. That Luang and the nation's cost scared shrine, Ho Phra Keo, who once had the image of the Emerald Buddha, Which is now enshrined in neighbouring Thailand 

Phra Keo was buildt in 1565 by King Setthathirat and was constructed house the Emerald Buddha, which the king in fact took from Thailand. Though the Thais took it back in 1779 and today there are no monks in residence, the original building lives on is now a museum of religious art and includes within its collection a Khmer stone Buddha, a wooden copy of the famous Luang Prabang and a transplanted jar from the interesting and elusive Plain of Jars in northerly Laos, which comprises thousands of huge stone jars. 

After a satisfying lunch of regional specialties we prepared ourselves for the trip back to Bangkok and after that, home.

If ever "money number one" was set in time as a national catch cry, it would have to be in Thailand where the phrase "money number one" is used countless times daily by many of the Thai people in dealing with the thousands of foreign tourists they regularly encounter.

Neil Hutchinson, an Aussie expat living in Pattaya has been instrumental in writing a series of books around the money number one catch cry, which have become extremely popular best sellers in recent years...

Dubbed by many as "The Single Man's Survival Guide to Pattaya" and "The Pattaya Bible" the Money Number One series are a recommended read by thousands of experienced Thailand visitors both male and female when advising potential new visitors about the who, what, where and whys of Thailand long before the bags are packed to go, and indeed long after they have been unpacked on their return home.
